Mixed up this awesome looking batch of chili this morning. Then as I was putting things away and talking to my wife we realized that neither one of us had opened the brand new box of beef stock that clearly had the foil seal pushed through.

After much debate I decided to dump it out and I don’t have the ingredients to remake it. I was really looking forward to chili during this snow storm. :(

The box chicken and beef stock we get punctures the foil when the cap is loosened and taken off.

If you don’t want to use the beef stock, toss in a can/bottle of your favorite beer. Tax the beer before adding and leave enough in the bottle for the after added tax.

Have you tried the "Better than Bullion"? I really like it. It is a concentrate, so a small jar goes a long way. Justs use a tablespoon. Sorry to hear you had to toss out the chili because of the possibility of contamination. That stinks.

There is no beef stock in mine and its tastes great. Are you saying you can't eat the chili now because you werent able to put beef stock in it?

No, I knew my wife had just bought the beef stock and assumed she opened it when she got it out and handed it to me so I used it. Afterwards she told me she hadn’t and we realized it had been opened at the store. It wasn’t just a bad seal either. It was clearly opened and the foil seal pushed in like someone stuck their finger through it.

As far as the recipe, I was trying this recipe for the first time. https://www.missallieskitchen.com/venison-chili/

Well now I feel dumb. I just dug the box out of the trash to read “inner freshness seal is broken when opening cap”. The marvels of modern Technology…

Thanks @Glenn! The good news is I procrastinated throwing it out so it was still sitting on the counter in the crock pot. Chili is back on! :tearsofjoy:

He has a specific venison chilli as well but I don't have access to the peppers he uses so I've never tried it

Not to assume you’re ignorant to this, but cascabel chili could probably be substituted with guajillo or chipotle for a similar flavor profile, and ancho chili is just a dried/smoked poblano, which you can do at home.
