Last year, after being completely disgusted by the butcher's cost for turning my deer into deliciousness, I decided to learn how learn how to cut up, process, and prepare all of my own deer recipes. I started by having many conversations with a hobby sausage maker and he referred me to this book. It's a long read but I read through some of the more pertinent parts (safety, smoking, recipes, etc...). It's not about venison but a lot of the same rules apply.
Good for beginners and I think it will help me once I start (after late deer season I begin to tinker). They also write a book on how to build your own smokehouse.
