Front shoulder roast

Instantpots work well for a quick-ish meal (3lb roast frozen to table in under 2hrs), but it can't compare to the smokey goodness of a charcoal cooker.
 
I realize cooking over wood is better, but charcoal is more consistent. Plus it works better in my Weber branded products.
I use charcoal sometimes...but we are pretty lucky in that a bunch of public land has fuel wood permits and I can go load up on as much turkey oak as I can find....I like wrist size branches I can cut into hockey pucks if using charcoal....drop a puck or 2 on the coals every 45-hour or so...Weber is my choice if I feeling to lazy to make my own grill/smoker.

I do a very similar recipe with a beef chuck roast. It's called beef pepper stout. Only differences I am seeing is I use a stout instead of an IPA and jalapeños instead of chili's in adobo sauce. Cook is virtually the same. I'll have to try this
