In search of the perfect venison chili

It's hard without knowing your tastes...then there's consistency. Some people like Wendy's chili that's basically all tomato juice, vinegars and a bit of burger. Then there's recipes that are practically salsa. I like a good dose of brown sugar, a cup or less, in mine. Also like a good dose of...

    Where to aim?!…

My spot as well. The temptation here is to aim closer to the spine because you don't want to miss low. Which is a mistake as you'll end up missing high or creasing the spine. You'll likely get both lungs here unless the arrow exits in front of the rear lung

    Stop chasing the weight game

DIY Processing - How Long Does It Take You?

The bagging and sealing burger is what really gums up the work. Even with someone else running the bagger and someone running the dealer, you're still running a out a minute per pound. Don't have a chamber vac so I don't know how fast that is

DIY Processing - How Long Does It Take You?

Also why I recommend having a dirty knife dedicated to doing cuts on parts of the animal that aren't bound for the table and at least two clean knives. If you run into something questionable on accident with your clean knife, it's now a dirty knife until it's sanitized.

DIY Processing - How Long Does It Take You?

Hogs are a totally different animal...I don't think I've ever seen a muddy deer. Come to think of it, I don't think I've ever skinned an herbivore that was muddy . Predators tend to be the filthy things

Mine certainly isnt sterile as its in the garage but dirt doesnt get on meat unless the meat gets dropped onto it. Dirt really shouldnt even get into it if you process in the field unless your the guys that insist on completely opening up the deer or the thing decides to drop into a creek after...
