I went back to butcher paper because the vacuum sealers I’ve used all fail the same way within a year. The heat strip must over heat and forms a kink. Then where that kink spot is, it leaves a pin hole on the sealing strip on the bag.
I usually wait to do all my deer at once and I guess it’s too much sealing at one time. Some of my machines have a overheat alarm that stops your use until it cools down. I hit that point all the time. It sucks to have to stop and wait. The best machine I have used is the cabelas commercial grade unit but it still has failed. But it has a life time warranty so I just exchange it for a new one. Still sucks not be able to finish your job.
 
I've had cheap vacuum sealers for years...Bought 2 or 3 before I bought one that worked ok...Cabelas hunter's edition vacuum sealer worked ok for several years for me. I would be able to seal 3-5 bags and then have to wait about 2-3 minutes for the motor to cool down. The other cheap vacuum sealers just quit sealing or sucking the air out. So at the beginning of this lock down, I went and bought a whole hog that I had to go and butcher myself. My cheap cabelas made me take about 2-3 hours longer to finish my job as I had to continually wait for it to do it's job...or sometimes I even had to put the meat in a second bag as I could see that the seal did not take. I even made sure that the bag was dry.

After that hog (about 280lb live), I went and got the LEM 500 Maxvac. The seal is about 3x as wide as my Cabelas vacuum sealer and I could continuously use it without the seals failing or having to wait for the machine to cool down. I vacuumed 10 bags easily at at a time...just worked so much better than my cheaper versions...of course it had better because it cost 4x as much. I caught it at a sale...I think memorial day sale with 25% off. Great machine
 
Butcher paper is perfectly fine for about 9-12 months in the freezer and about 3x faster than vac sealing. I wrap about 75% and vac a couple roasts that may end up in the back of the freezer and I'm covered. Another nice benefit of vac is you can thaw in water really quickly for unplanned meals, I vac a couple extra for that factor.
 
I'll second the LEM 500 Maxvac. Replaceable consumable parts and a long duty cycle are nice. I try to use my money to buy a piece of processing equipment each season rather than paying for a processor.

That's what I did when I first started hunting 17 years ago. My first deer, it took me 18 hours to process it as I would watch my video (on VCR) and stop it, go and do the cut and go back and watch the next part of the video...or rewind and watch it again. That first deer I killed that first year, I cut up the deer and took CLEAN meat to the processor. I gave him 25lbs of meat and wanted summer sausage. It was pretty good. Now my second deer I did not know that i wouldn't be getting back my deer. I killed my second deer that year, and wanted more summer sausage, etc. What I got back turned my stomach. It tasted almost rancid...I gave it to my dog and he literally turned it down.

So I made the decision to do my own deer from then on. I bought a cheap set of knives for processing...boning and fillet knives. I then found a meat slicer, dehydrator, vacuum sealer, smoker and meat grinder. All was bought piece meal...or given to me as birthday and christmas presents. Now I'm set as far as processing my deer...

My vacmaster (and I assume other similar or better chamber sealers) has a replaceable double sealer bar. I don't see where it would be likely to prematurely fail in that way, but if it does the replacement is a 2 second job plus however long it takes to open the package.
