Aged venison video

I think buying an extra fridge on Craigslist is the smart way to do it. But here is what I did.
- got an old chest freezer for $50
- put in a temperature controller
- painted it (my wife chose the color, since she is allowing it to sit in our living room)
- took the lid off, built a wood collar to go between the freezer and the lid, then installed the lid on top of the collar
- drilled holes for CO2 and taps
- cut out a slot for a steel rod to hang meat from
- stained the collar, installed taps, CO2 manifold, 2 pony kegs

Now it is a deer&beer fridge. When there is a deer hanging I have a small fan that I put in as well. I homebrew so the kegs are filled with my beer. If I had to do it over again I would get a much bigger freezer for 3 kegs and more room for deer.

Just cut up my last deer of the season last night, had been dry in the ice chest since 1/30 I’m no scientist but you can definitely tell when meat smells good or not. This one smelled great! I checked it every afternoon & we only had one day that got close to 40. I’m a big proponent of keeping them cold & dry.
 
I'm sure all the homebrewing deer butchers out there would love one.

I’m not so sure about sharing my keg space with deer meat. Maybe I just need “another” fridge.

Next time it'll be the whole quarter.... Lots of waist cutting off the husk

That is 7 days "wet" aging in the cooler and 18 days in the fridge
 
My HOBART commercial refrigerator has been working great for deer. I don't have a fan or a humidifier in it but the commercial refrigerator blows a lot of air around in it and it's set at 38 degrees. 3 deer in it sofar and did great.
 
I quarter mine and put them in a cooler for a week with the drain open. I check the ice daily. I’ve got an old fridge I need to try fry aging with

I moved away from traditional "ice"....I dont care for the way it turns the meat gray. I freeze water bottles. They stay frozen way longer and virtually no water on ur meats. I still drain daily but it's just small amount of blood coming out. If I shoot something 1 weekend I will throw it in the cooler filled up to the top with water bottles and swap out the top layer of water bottles that partially thaw wends/Thurs and by the next weekend the bottles on the bottom of the cooler still frozen from the weekend prior.....meat still red like when u killed it
