This is hands down the best article I've ever read on "gamey" meat.

Can I still say that woodcock tastes wormy? To this day it's the only wild meat I ever tried to eat where I said, yup, I'll never kill one of those again.
REALLY??? I like it. Only thing I wont eat again is merganser....or hooded merganser, or any fish duck. bleh...

"If someone tells you they had to toss out some meat because it was “just too gamey,” tell them, “no, you threw it away because you did a half-assed job handling it.”

Best line ever. Thanks for sharing.

“Gamey” is a 4-letter word in my house. There are a thousand better words to describe the taste or distaste of meat. Just ask my sister what happened when she called a Thanksgiving duck (farm-raised to boot) that dirty, “fowl” word...Thanksgiving became Chewoutsgiving real quicklike.

I just made some dove without wrapping them in bacon. I also cooked them simply without a marinade. Wrote about it here in the cooking thread. Long story short - I finally learned what dove taste like and it was quite amazing. It was a rich deep flavor.
