Braised Shanks

So, I mentioned in another thread that I cook all my bone-in roasts this way. I happened to be gifted 2 shanks by my dad and this is what I did with them.

I chopped potatoes, carrots, onions, and mushrooms. Added them to a crockpot basin since my Dutch oven is too small to contain the shanks, and I don’t care to cut them up. Seared the shanks on my grill for just a few minutes for color/flavor. Into the crockpot they go. Some salt, fresh thyme and Rosemary, cup and a half of red wine, cup or two of water. Wrapped with foil and into a 190 degree oven. There they sat for around 26 hours.
The result is a clean bone, rich bone broth, still pinkish meat. Tender, juicy, and by far the way I prefer slow-cooked meat. Especially when you’re able to leave the bone in.

Yeah, even on low my crockpot isn’t sophisticated enough to control temp. I don’t like to cook roast on anything higher than 200 if I can help it. Maybe 210F.

Edit: you will not need chap stick in the winter after eating this.
Ok,my crockpot is very basic as well. Not sure how hot it is at low setting,seems pretty hot.
 
Thought I would bump @JSEXTON23 thread with some pics of two shanks at 5 hours. If I remember to take a pic before I dig in I will update but, my desire to start eating usually overides my desire to take pics for you guys. :) Meat is already falling off bone.

That sounds great. What do you g uys do with the bone broth?
 
I actually took a couple of pics before we ate. I just grabbed the end of the bones with tongs and this is how clean they came out. I then had to scoop the meat out with a spoon. It was too tender to pick up with tongs. Mmmmmmmm....

I'll sometimes make gravy but I typically don't do anything with it. That's something I've been thinking about. Got any good ideas or recipes?
Yes for gravy and soup stock, stew base.... but I'm also wondering what others use with it too. Been hearing a lot more about bone broth especially Keto and Carnivore type diets.... I know several on here have been practicing that for a while. I have been since last August and just searching for some new ideas or suggestions too.

Your post made me save the broth. I try to eat a paleo'ish' type diet but, I've been researching the carnivore diet lately, it's not something I could commit to completely but, it seems to make sense and I understand the health benefits. I might make some soup with it or maybe just drink a glass a day. I tried some before I put it away and it was surprisingly good just to drink it.
