How much difference is there between a 2017 Kestrel and a 2020 Kestrel Flex?

Two completely different feels when using them due to the pleat in the Flex, but very similar in all other ways. The adjustable bridge on a Flex is pretty much standard fare now too.

Thanks, A guy is selling a 2017 Kestrel for $190. That seemed a little high, but within bowshot if it's a good saddle. Is a non-adjustable bridge going to be a problem?

That price is fairly consistent for used Kestrels, but you can now get other makes brand new at that same or lower price, so I would think about it before you buy. The adjustable webbing bridge can easily be added to the Kestrel ina matter of minutes, so that is a non-factor. The Kestrel is a well built saddle, just be sure it is the right size for you if you go that route.
