Making sausage

Made the annual batch yesterday. Had a couple friends come help and make theirs. 13 hours yesterday and 3 more today because we ran out of casing and had to make a run this morning. Think we made about 250 -300 lbs of link and breakfast patty sausage. Glad that’s over! Time to enjoy.

That is a lot! I usually make a bunch with some friends but this year i will go solo. It should end up being 50# or more when finished.

Someone was busy with a camera while everyone else was working.
Shoot I had to snap those photos real quick while you were grilling sausage. Don’t let him fool y’all he runs a tight shift. You see he’s got his 75 year old neighbor in there working for free! Haha.

I go check on the sample sausage on the grill, come back and they sitting around drinking all my beer. Had to crack the whip!
 
I made about 55# of sausage yesterday. First time by myself in my own kitchen,it was great. I made two different kinds of apple sausage,some Bratwurst,Chorizo,garlic and cheddar and Hot Italian. It was a long day and i took no pictures. I read about a great trick for twisting the links. You only twist every other one,that way you can twist in one direction all the time. That worked well especially by myself since i only had to pause the stuffing every other link.
My freezer is full now!

Tie off the end of the casing, pump the meat into it the whole length that you want to package. Cut and tie off the other end. Then twist your links in. It will really take up any slack in the casing from being under stuffed. Tight packed casing is easier to bite into. Helps give it that snap.

How does that not blow the casing? Do you stuff it pretty loose?
 
Jeez I thought my 20 pound batches were a lot.
I had a good season,two bucks and a doe. And i saved more cuts for cooking them whole,like the shanks and neck meat. I think i had a little over 50# of venison chunks before i made burger a few months ago.
 
With all the distractions we have in life like facebook, snapchat, pinterest and whatever else people waste there time with, is it not incredibly fun and rewarding getting back to basics and do something like make 100# of sausage? Kudos man. There is no greater joy in life than scouting your prey, setting up a place to hunt, wait countless hours and harvest an animal. Then the real fun starts. Dressing the kill, getting it to your truck and hanging it at the house. Then butchering and preparing the meat. Finally cooking it and sharing it with family and friends.

My goal is to be able to retire soon and spend the rest of my days doing just what you did today. Love it @swampsnyper . Pete
You know, I too enjoyed all that post kill stuff when I was younger, but as you get older you may find that you don’t enjoy it as much as you used to. I’d rather just pay someone to do that so I can spend that time in the woods looking for the next one!

It’s a job! That’s why we get a few people together and make a little social gathering out of it. Hope to be just a supervisor one day and my kids do all the work. Plus we always wait until after the season to do it all. So no missing out on a hunt. Perfect rainy day get together.
