You're going to be hard pressed to find a truck that meets your requirements considering the popularity trucks are having right now. I used to use my wife's volvo s60 until she said no more. I didn't even consider asking permission to use our suburban. About a year ago I picked up a 94 F250 7.3l diesel with 200k on the clock for around 3k. I regularly see 90s Tahoes and cherokees with less than 200k on the clock for around 4k. They're out there just gotta keep searching.

93-94 was the idi to powerstroke change over year. I've owned both and would take the lower displacement idi 6.9-7.3......i know of 3 that have close to or over the 1 million mile mark

Yup mines an idi. I'm the second owner, it previously lived on a farm doing chores. Runs like a top. Being all mechanical it's the perfect hunting truck.

transmission and ttb front axle are the weak links. The powerstrokes are a better platform but i love the older idi.....with that said, my current f250 has the 300 inline 6 with a c6......best gasser Ford (or any other brand) made IMO. i keep looking for the dana 60 front axle to throw in it. 1987 with 400k. Maintenance and rebuilt head is all its ever asked for.
Close to the same torque numbers as the diesel but runs quite. ... Bought it for 500 bucks

Yeah I'm not loving the TTB either but for now I gotta run what I brung. I'm jealous over your 300, that's my jam. You aren't wrong about the e4od, had a hard shifting gremlin I just finally got sorted out via lots of multimetering and a new sensor.
 
Convert a cheap minivan. Not even kidding.

Eberhart uses one, and my buddy and I were talking about how perfect his van would be for the job. You can remove the back 2 rows of seats in most vans and have a TON of interior space to utilize. They also have lots of sub-floor storage for gear. And.... they are easily found at inexpensive prices.

I love my Tacoma but I like the idea of an older Subaru AWD wagon like the outback or Forrester with a gutted out back...Those suckers can go in the mud and snow, get great millage, run forever and i have seen them go for reasonable $ around here.
 
A jeep Cherokee xj is hard to beat. Inline 6 runs forever. They share many parts with the grand cherokees of the era and wranglers, so cheap parts available everywhere.
 
If you're considering an AWD minivan then a Honda Element may also fit the bill. You can fold up the backseats or remove them completely and the whole floor is already lined with hard plastic so easy cleanup if you toss a deer back there.

They were discontinued in 2013 and depending on the mileage, you should be able to find one that fits your budget. However, if you need true 4wd, then you can't go wrong with an older tacoma or a 4runner. I've seen dudes run those over 200k miles so i wouldn't worry about buying one with over 100k miles on it
 
My buddy just rolled over 320k on his subaru outback. Mechanically sound aside from general upkeep, brakes, tires and wheel bearings and gets descent mileage. Great in mud and snow.

My daily driver/hunting truck is a ‘06 tundra quad cab with 165k miles. That 4.7L is a great engine. Relatively easy to work on as well. My buddy is a mechanic and he sees them with over 300k regularly. Said he got one in the other day that had 600k on it. I plan on getting my wife a new ride before the end of the year and taking over her current ride as my daily and using the tundra strictly as a hunting/fishing truck.

If you can find a 1st gen tundra, they’re hard to beat. A Tacoma quad cab with the 6’ bed would also be a good hunting rig. The short beds don’t have enough cargo space imo.

I have a tarp in my trunk year round for just that. That way I can't forget it.
I had my truck loaded up with stuff the morning I wanted to go hunting. So I took my wife's car. She wasn't so happy lol
