Nutterbuster Grinds His Meat

How does it handle silver skin. I only asked about the foot switch because I haven’t used one but wondered if they were worth it.
If you are going to use the grinder to stuff casings, get the foot pedal. If all you do is grind it is completely unnecessary.
 
I’m tired of paying the local processor and am wanting to start grinding my on meat. Are y’all adding fat and if so what kind/where do you get it? Thanks

I only add fat if I know what I will be using the meat for in the future. Otherwise I add fat if need when I go to make something. If I'm making hamburgers I add beef fat so I can feel good about cooking them medium rare. I usually smoke a few cases of brisket every year so I save my trimmings from them to add to my burgers. For sausages I normally add pork fat from a local butcher shop.
 
I have the next smaller size, and for the most part it acts like it isn't there. You may get some strands built up that you notice when you switch (if you switch) from coarse to fine grind. The worst part about the LEM Big Bite machines is that you get so spoiled with the speed of the first coarse pass, the fine pass through the grinder feels like it takes forever.
I got tired of running everything through twice. Went and got a quarter inch plate and have been happy with the results. Meat needs to be very cold to keep the fat from smearing. Helps to put ice packs on the head too.
 
Alright trying to figure out what meat grinder to buy for Christmas. I want to process my own deer. I usually kill about 3-4 deer per season. What would y’all recommend for let’s say under $190. There are so many with so many mixed reviews that it’s confusing.

I would strongly recommend putting the thought on hold until you can get a 3/4hp model with all metal parts. I've used hand grinders and cheap electric ones and if my house caught fire tomorrow I would either afford the one I have now or just cut everything into roasts and steaks.

I'm running an stx megaforce 3000, it was less than 190$. I just looked on amazon and for some reason I can only find the 'turboforce' not the mega force. . . Not sure what the difference is, but I like mine a lot.

How much do y'all grind vs treat otherwise? And out of what you grind, how much would go to sausage.

If you're heavy on grind usage, listen to @Nutterbuster. Hold out for the good stuff. If you're less heavy on it, then there's more flexibility.

I make some sausage, and use the ocasional pound of ground meat. But I mostly package up chunked meat for stew/grind and grind a pound or 5 at a time for grind or a batch of sausage. a lot of what most people grind...I don't. I cook most shoulders and shanks whole. I smoke the occasional rack of ribs. I do a lot of "fancy" lookin' roasts and chops. And I do a small batch of sausage at a time.

This is manageable with a crap grinder, on similar deer volume.

If hakf your deer is going to grind and sausage it'd be a completely different story.
