Pest control & Fun Practice

Woodchuck is one of my favorite wild game meals. Here on Long Island I hunt them with my high power pellet rifles and on my property up in the Catskills I hunt them with a .243 or my .223 The large ones make an outstanding pot roast and the smaller ones I fry up just like you would a squirrel or rabbit. Absolutely delicious
 
When they alarm call they whistle. It is a very high pitched short bark. Everyone back home growing up called them that.
Exactly! And some folks could ( not me ) could replicate that noise and get them to either stand up in their hole or wherever they may be hiding for that easier shot.

There’s a lot of things we eat that may not look appealing but taste great. Ground hog really is good meat. Main thing is to simmer the grease out before final preparation. They are a very oily rodent.
 
I've heard you have to remove some glands from them before cooking. Do you guys that eat them do that?

Raccoon yes you have to take out the glands as for groundhogs I treat them like a squirrel when skinning and preparing them.

I remove the glands under the arms. My dad called them their “lights”. If you don’t remove them they have a bitter taste. Same thing with the little brown glands under a squirrel arms. I remove them too. They were a staple at our house through the summer when other game seasons weren’t open. Being poor and hungry will make lot of things edible. For you fellow mountian guys throw in some branch lettuce and ramps or Polk salad and no restaurant meal can compare.
 
There is a rural town here in Florida that has a festival each year for the possum....over 50 year tradition....possum kept them alive during harder times.
 
Swamp cabbage is a Florida cracker dish....browned meat like hog or small game and the hearts of the cabbage palm and tomatoes....u can add other stuff but the meat, palm heart, and tomatoes is the staple. I eat a bunch when my great grandparents were still alive.....
