What is a good quality sausage stuffer? I bought one last year and the plastic piston warped while making cheese sticks. I'd like either a steel piston or at least a heavy duty plastic that won't warp under pressure.

I have a 11# vertical branded Cabela's but made by Weston. The piston is plastic but I've not had the issue you describe. If I had to buy it again, I'd get the actual Weston Model because going through Cabela's for parts is a pain. I only had to get parts once in the 15-20 years I've had it and that was user error. I would always let it go all the way down and by doing that I wore the bottom tooth on the shaft down. It still worked but left an extra amount of meat in the hopper which I didn't like. Now I pay attention to the depth of the plunger and refill before it trips. I did get a smoking deal on the Cabela's model though so I can't really complain. I probably put 200 lbs though it every year on average. I do snack sticks, brats, summer sausage and also just use it to get the ground in the freezer bag. The snack sticks definitely take more effort than anything else. The 1st time I tried it it was near impossible and said never again but learned I didn't have enough water in them. Once I learned that it was much easier. Maybe try more water?

Water stuffer! I've got a small 9# Dakota I picked up used. I'll never crank a stuffer again

I have the cabelas vertical 5# I think. It has a plastic piston but as long as you don't bottom it out and keep cranking, it will last. And water that sausage down. It makes stuffing a lot easier. It shoots out easy, like 5 minutes after eating taco bell easy. Plus I think it has a lifetime warranty. I know the commercial vacuum sealer does and it was an easy swap out once it goes out. Just keep your box. Last one you will ever have to buy if they keep that policy like it is.

So the piston is steel as well?
Yes, just has a silicone (maybe?) o-ring around it.
My only complaint would be these things need to come with a fitted push rod to clean the tubes out at the end as you end up with a tube full of meat.

Another reason to go with the Weston version over the cabelas! I didn't realize they were all steel. I found a few appropriately sized bottle brushes with stiff bristles to clean out the tubes. Cleaning them out could be easier so curious what others have done. My cabelas version has a slight taper to the tubes. Is the Weston straight?

Mine came with four straight metal tubes

I have a 15# Hakka vertical stuffer from Amazon and it's a beast. No plastic at all. Does a phenomenal job, but it's a tank.
