Smoker Recipes Please!

Pork Belly burnt ends

Take a skinless pork belly and cut into 1"x1" cubes
Rub them down with your favorite rub
onto the smoker at 225f for 3 hours fat side up
pull of smoker and put into a throwaway pan.
roll them in your favorite Sause then back on the smoker for another 30 min

Hawaiian style glaze...

Shoyu (soy sauce)
Brown sugar
Sesame oil and seeds
Garlic
Ginger
Chili pepper
Rosemary
Sage

Soak meat for a day in sauce then smoke.... keep meat cold till time to smoke.... For venison and sheep the key is to quick char the meat to seal in the moisture and then low smoke till internal temp of 175-180F. Remove once temp is reached and wrap in foil with half stick of butter and let rest for 15mins.

This is some Axis backstrap and tenderloins i smoked low using that recipe...


do you have the measurements for this recipie? i'm very interested in this flavor. What other meat types/cuts would be good on the smoker with this?

Sorry no measurements. Just a lil of this and a lil of that....make sure you make the sauce in a warm pot so everything can blend good, cool the sauce before you put with meat.... I usually just taste the sauce before I soak the meat, should have a nice sweet salty light spicy taste. Any meat is good with this sauce.. pig.. goat.. cow.. sheep.. deer... fish... what ever you can think of... make sure to glaze the meat while you cook it too.
