You need to find you a cajun to teach you how to make a squirrel, rabbit, dove, qual sauce piquant. It’s a lot like what you made here but fairly spicy.

Just smothered in onions and a little oil to brown and it will make its own gravy. Keep adding water until tender.
 
Looks good! I did something similar yesterday. Browned them; buried them in onions, garlic, and mushrooms; and then added enough red wine and homemade chicken broth to braise them. Served with collard greens and mashed 'taters.
