Braised shank is my favorite thing to do with venison. Braised neck tacos is my second favorite. Both of which are somewhat unfortunate, as venison sausage is also high on my list...I kept my shanks whole last season for the first time and will never trim and grind shank again! I braised them whole based on several braised veal/venison shank recipe's I found on line. I do plan on trying osso bucco with some of them soon.

I don't like putting either shanks or neck in the sausage. So after I found out about how to cook them they turned from my least favorite parts to some of the tastiest.
