Whats your go to Venison sausage and jerky (full muscle not ground)recipes/mixes?

Looking to make another batch of each. Any suggestions? Ive used LEM's I like it but looking to try something new. Not looking for anything spicy.
 
I dont know what you mean by full muscle recipe. Dont you grind the meat for sausage?
If you go by weight i dont see where there is a difference between ground or chunks.

I was meaning the jerky will be from whole muscles not a grind.

Aah,that makes sense. I never use grind for jerky,that's why i was wondering. My favorite jerky is to slice it and marinade it in salsa for a couple of hours then dry for 8 or so.
 
high mountain , hickory. cheap and good. you can sprinkle some brown sugar on if you want a sweeter jerky. or cayenne for a little spicier. i used to make my own concoctions but find it easier to just use high mountain jerky mix.
 
I normally use grind for my jerky but have been wanting to try this recipe on sliced meat. It's 3/4 of a bottle of dales steak seasoning, 3 tbsp soy sauce, 3tbsp worcestershire sauce, 1.5 tbsp garlic powder & 1.5 tbsp pepper. Makes 5 lbs of meat, mix it up & leave it in the fridge overnight. It's my favorite jerky recipe I've had by far.
 
For sausage, hanks shaw’s British banger and Romanian style sausages are phenomenal.

In the meat eater cookbook there is a recipe for “The Queen Mother of All Jerky”. My wife is not a big venison fan, but she really likes that jerky recipe. I’d screenshot and post it, but that might be against the rules here...not sure.
 
Made all kinds of high mountain flavors this year.

Inferno, hunters blend, and spicy lime are all awesome.
