Why don't you just take a rope and tie the other leg off to another tree after you hoist the deer up? It's what I do and it works well.

I am the OP here. I’ve been deer hunting for 34 years and butchering my own for about the last 20 years and it never occurred to me to tie off a leg to another tree. How have I not heard or read that? It makes sense. I will definitely be trying that on my next one.
