As a general rule, your hitch cord should be at least 2mm smaller than the primary rope. Less that that and it won't bite as well and could slip. If the difference is too great, it could cause your hitch to roll over itself. This of course is a general rule as you also need to consider the construction of both the rope and hitch cord. If EWO says their beal jammy works on the canyon elite, I'd trust the info.

Just for size reference. Here is a Bluewater 7mm (tan) and 8mm (black) VT in a schwabisch on Edelrid 8.9mm swift protect pro dry rope (which is the perfect size rope between Oplux and the larger two number diameter ropes). I don’t use the 8mm on this rope although it does work.

The smooth nylon cover is so nice that I put a stronger Vectran core in it and made a long soft shackle that was tied into a friction hitch. Being able to open and close the loop I could attach it straight to the harness, eliminating a carabiner.

The 2800 lbs rating is small if the loop isn’t used like a double eye hitch cord, the Prusik would only be the 2800 lbs, as only one end is being attached to carabiner.

Here is a photo of the Bluewater 7mm VT in use on the Edelrid rope I posted above. I weigh 240 and it holds with zero issues even when swinging like a child or jumping up and down. Yet it still moves easily once I stand up.
