I've only eaten 3 bears. But we mostly make it into roast, or chop it up for chili. maybe I don't prepare my meat properly but I just couldn't get a really nice tasting steak out of it. My favorite was roasting it and then making a pulled barbecue sandwich.

I've heard you have to cut all the fat off, and right away when you harvest them so it doesn't spoil the flavor of the meat...

I have no experience with it though...

For us it’s always seemed to depend on where the bears from and or what the main food source is. Berries, nuts and grasses have equaled good tasting bears but a lot of protein, pine nuts or if there’s a dump near by it tastes pretty rough. A good bear is pretty good eating though. Read an article about bear hunting Alaska once and the guy said they only hunted in the spring to mid summer because the bears were all eating grasses, berries and mushrooms and tasted good but as soon as the salmon started showing up and they switched the meat tasted horrible.
