Health and safety wise, freeze everything first or it depends on the animal?

What did all those people do before refrigeration.... It's a miracle we've made it this far....
That’s the one thing I can’t wrap my head around living off grid is how they kept meat from spoiling without refrigeration, I mean I know how they did it but I’m not eating over salted or smoked meat always lol

I wasn't there to know but i think they ate fish and small game 95% of the time back in the day

I would imagine, but I’m sure they killed cattle also in a homestead small village setting, I guess if you’re eating a lot at kill time smoking the rest isn’t such a big deal. Their immune systems were probably super stout also so they could probably tolerate a lot more than modern man.
 
I think there was more reliance of starches like grains or potatoes that can be stored long term with little to no technology. I've been told flour was a main ration for soldiers back in the day and they made bread, every day. I've also read that there was a much higher value on other animal products, like milk, cheese and whey. You can make a Lotta cheese from one cow, but not so many stakes haha. That would be an important source of fat as well, fat starvation is a real thing, apparently

Traditional southern hog butchering was supposed to big party and the more hands to help the better....after scalding the old wermans and youngins job is cooking the crackling to munch on while butchering the rest
