I have been butchering all my deer with fillet knives. After my last doe, I decided that I want to find out what a dedicated boning knife was all about.

After a lot of research I settled on the Victorinox boning knife with the straight, wide, and stiff blade. I liked its simplicity and similar shape to my fillet knives. Also, the cost was low at $21 delivered. I received the knife last night and am extremely satisfied with it!

Knowing it doesn’t come with one, I broke out my sheath making gear. My kit consist of kydex, Chicago screws, aluminum foil, EVA foam, an iron, and a wood board.

I fold the kydex inside the aluminum foil and hit it with the iron. After it’s good and noodly, I wrap the knife, stick it between the foam pieces, throw the board on top of the whole mess, and stand on it for a couple minutes to set. After trimming, installing screws, and final fit and finish, the thing ain’t half bad!

For western hunts, I wanted to be able to bring the knife in my pack. I haven’t weighed it but it’s ridiculously light for what you get. I’m really happy with this setup and I haven’t even cut anything with it yet!

nice job and good knife choice. Victorinox/forschner are my favorites and their is no going back once you use one. I like the forscher with the flex blade the best myself.(second from the bottom) I also have a small paring knife that works great to get in those small areas...forschner.JPG
 
I ordered a kydex sheath kit from knifekits.com

I made a sheath for a gut hook knife. It was super easy - just heat up kydex in oven. I made a DIY kydex press from an old thermaseat and plywood. I fastened the press together with an old door hinge I had laying around and then just used wood clamps to clamp the two halves together. Sheath looks nice, but I still need to order a special tool to install the grommets...

I have a grommet die on the way. Should have it tomorrow.

BTW, your sheath blows mine away for my processing knives....I usually cut a piece of plastic milk bottle and fold it in half then wrap in gorilla tape. Super Classy.

Hey, any port in a storm. I have a knife with a cardboard and super 33 taped sheath for a few years now!

I wanted something stout for bouncing around in my packs though...

I have an eyelet hand tool I bought from a garage sail but the grommets that came with the kit wouldn't fit, and I couldn't find any eyelets locally that weren't the ugly cheapo brass.

What setting tool did you get? I’m curious how it will work.
 
Grommet setter came in and finally got around to finishing mine. Would do a couple things differently, but not bad for my first one. Fits the knife great. Enough resistance to keep it smug in the sheath but not bad to pull out.

Not sure I’d go with hunter orange again. Picks up smudges like crazy.

Thanks for the update! Which tool did you use? Also what kind of smudging are you getting? I was just about to buy some orange kydex.

I got the one in the link I posted above. Works great. Just a couple quick taps with a hammer on a solid surface and the grommets are set.

Pencil marks don’t come off, picked up some fingerprint or other grime from the table I was working on in garage. Tried washing it off but no dice. I photographed the good side lol.

I have now quartered two deer in the field and finished butchering them at home with the boning knife. I love it. I used my Izula to skin and make tough cuts. The Victorinox was just for meat. The big grippy handle is awesome. The light weight yet full size of this knife makes it so nice for cutting up deer in the field.
 
I bought a Victorinox with a semi-stiff blade.It makes processing much more enjoyable.Great job on the sheath.
 
There is no better squirrel-slicer than the victorinox paring knife. I want the lamb skinner at some point as well.

Awesome job on the sheath!
I can't decide between the lamb skinner and 5inch skinner. I like the 5 inch skinner a little better due to belly profile, IMHO.
