Need a Grill - Can I Smoke?

For some reason my family seems to hoard grills so it's almost hard to choose which one to use. For just a quick steak we use a cheap gas grill. Otherwise the kettle gets used when we have enough cooking time and the flavor is better in my opinion off of coals especially when we toss in some wood chips. Probably the best steak I've ever had was at camp on the offset smoker. Get the coals set, toss on some fresh maple cuttings and warm smoke a prime rib while you're out doing some evening fishing for a couple hours. Then finish it off right next to the heat box to desired finish (anything past medium-rare is a sin). I haven't taken the time to fully smoke anything but this has me thinking about it

I have a Pit Boss Austin XL which is super convenient and perfect for smoking and grilling. I used to laugh at pellet smokers but not anymore, its awesome!

To me, smoking or grilling on this is almost like cheating...almost.
If you haven’t, you need to try the reverse sear on steaks...my family is now addicted

I also built an UDS (ugly drum smoker) a few years back. I sort of did it just for fun, but it is a really good smoker. It maintains a consistent heat, and I can run it for up to 24 hours on charcoal if needed. I have about $100 in mine. It was a fun project, and a good way to cook.

I stopped reading at “wife destroyed the grill”.....why was your wife using the grill in the first place? Isn’t anything sacred anymore???

can you get a good sear with pellet grills? If I spent all that money and couldn’t sear I would be so pissed!

I use my weber charcoal grill to grill and smoke and it works just fine. I smoke a 4lb pork shoulder and it takes me about 7-8 hours and isn't that difficult. Once you find the right vent settings to maintain temp all I do is check on the temp every 30 min or so. There are more expensive options with nice features but the weber works great. Plus charcoal makes the best steaks IMO
I have a weber smoker, but really want the grill. I end up converting the smoker onto a grill by removing the middle section more than I use it as a smoker.

When I do smoke stuff, I've taken to smoking it for maybe an hour, and then finishing it in the oven, instant pot, or crock pot. There may be a small difference, but you take on most of your smoke flavour in the first hour, and it's nice not having to babysit.

Depends on the model of pellet grill, alot of them have a grate you can move out of the way when you want to sear or cook over direct flame... I use mine for both grilling and smoking.. it only takes a bout 10 mins for it to heat up and I can trust my wife to hit the switch when I'm on my way home from work lol.

Actually doing reverse sear on some ribeyes tonight haha, they always come out excellent!

Hell yeah you can haha! The pit boss has a sear plate that slides out of the way to give direct flame to the meat. I know your in MA i picked up my austin xl from a walmart up near boston last august for $150 when they put their grills on end of the year sale. Im not sure how soon your looking for a grill but keep an eye on brickseek.com itll list sales on items from multiple stores such as lowes & walmart.

A few years back I tried to kill my wife with some shrimp I put on our old grill. I knew she had a mild reaction to shell fish, this time it was bad enough to warrant a new grill. I love the flavor and versatility of charcoal. Sometimes just turning a knob and lighting the gas is easier. After looking into a few different option I went with the Char-Grille gas/charcoal set up. Once I added the side box smoker it will do everything. Most of my smoking is done at 200-225* F. Pellet smokers are real nice for the reason of setting the temp and walking away. Charcoal is a bit of science to keep the Temp right. This has been awesome for the last couple years.

The slow and sear/weber combo is a good combo. I got a SnS for Father's day about 4 years ago. After learning the snake method I like it better for controlling a lower heat... I have a treager, and 3 different webers, an 18" kettle, 22" kettle and 14" bullet smoker. All have their place. Webers are cheap have a decent warrenty. My 18 inch kettle is a steak, wing, rib go to machine.

I started smoking meats two years ago, I use a pellet smoker and probably prepare 20-30 pork but ya a month now. Get one and learn from the internet and your own experience and you’ll never look back.
