So after reading up a little on water knots for webbing the one thing I see is that over time the tail ends can slip. Would stitching the tag ends prevent this? I don't have any experience with water knots. It does look easy to tie.

Unless the stitching was enough for life support it wouldn't help. But if you can do life support stitching there would be no need for a water knot.

Id guess you could fold the tag over and sew it. The knot works on friction and won't allow the tag to slip through. In the event you didn't notice the slipping, the tag would eliminate a catastrophic failure. Ive been using overhand knots and haven't notice any slipping.
