1st time eating bear. Processed my bear meat today. Divided it up into loins, stew meat and ground meat. I did a lot of cleaning to cut all the fat, membranes and tendons out. It’s pretty messy meat.
Made 2 patties of straight ground bear meat and added some salt and pepper. Put them on the grill and made a burger. The flavor was good but the texture seemed kinda stringy, even though it was ground up. Think it will be better in a chili where it’s in smaller pieces. I’ll cook a stew next week and see how that goes. Might just grind the next one all up. It was a lot of work to get the meat clean.

The only time I've had bear was in the form of summer sausage and it was great!

I ground up all of mine. Didn’t do any burgers but made all of mine into breakfast sausage with plenty of fat and spices. Turned out great.
