Get you a nice thick cut pork chop or 2. Put some duck fat in a pan and get her screaming hot. Put only salt on your chops. Spices will burn. Jently place that chop into the pan and don’t touch it for 5 minutes. After 5 minutes flip the chop and reduce the heat to 3/4. Toss in a clove of garlic and a rosemary sprig. After 2 minutes throw in 2 tbs of butter. Let it go for 3 minutes. When the time is up, tilt the pan and spoon this lovely duck fat, pork fat, and butter concoction over the pork chop. Put it on a plate and don’t touch for at least 5 min. Dig in!
