I have to haul a deer thru grass that goes from my waist up to my shoulders. Some water and sticks and timber ridge rows. . A cart would be a mess. Has anyone used a deer sled especially a folding one for this purpose that can give me some advise as to weather it will work? maybe some recommendations.

I made the decision this year to just pack em out. Just seems like the easiest way with the least amount of variables.
 
There have been multiple discussions on this site about different sleds for retrieving game. Use search section and you should find all the information you could use about use, make and model of sleds.
 
I bought a jet sled for this upcoming season. I haven't moved any animals with it yet but I've been using it for yard chores and it works pretty good. Moving limbs after the ''hurricane'' was simple and I've filled it with dirt and moved it with the riding mower.....probably over 200 pounds and drug it across the driveway....so far so good. The only thing i want to test out but haven't, is how well it'll float with 100-140 pounds in it. If it floats with game in it then it'll be perfect

The jet sled floats with me in it but it's pretty unstable. I think I'm going to cut pool noodles for the 4 sides and leave them in the truck.....if there's going to be a wet extraction go grab some noodle and sail on.
Now i must go clean off stinky swamp water

In the environment you described, I would field quarter and pack out if legal unless the drag was very short...

I have a jet sled and it still requires a lot of effort to pull a deer out in it...It does make a good place to put my deer in my carpeted camper shell covered bed of my truck - keeps the blood off the carpet and I can also use it to help me put the deer in the truck solo - lift up one end of sled and prop on tailgate then lift and slide sled into truck...
 
I have a deer Sleigh'r and have used it to drag some good sized deer out by myself.
Works great on terrain like you are describing... wet helps, grass helps.
It doesn't make it easy but makes it manageable for one person.

The sleds are a bit more finicky. My brother brought his sled on a hunt and we hauled an elk out with it.
It was alot harder to go around obstacles and we ended up just packing the meat out on our shoulders the last 1/4 mile.
 
Works well in the swamp.
