Packing out deer (backpack) question

3 things I’m worried about:
You should skin the whole thing, right? You don’t want hair everywhere.
The bulk of meat with bones in it has to be huge I don’t think I have the fridge space.
I’ve heard taking meat off before rigor makes it tough and it’s best to hang the deer, let it tense up, then relax. If you cut it all up it should bundle up like a ball, right?

I use a cooler and frozen water bottles/milk jugs to let it rest for few days before processing. Much cheaper than having a whole dedicated fridge for sure. Yes, most people skin the whole deer, but there is no definite "right way" as long as you get the meat into your belly safely
 
I’ve used my tether and lineman’s ropes girth hitched around 2 trees to hang em up like a gambrel. The ropeman makes it really easy.

And if you rappel you have enough line and carabiners to fashion a makeshift block and tackle setup to make raising the deer even easier.

As for the bags, I’m not hunting days from the truck. Isabel the cheap cabelas game bags for when it’s really hot, but I haven’t had to use them yet. I have a trash Bag I lay the meat on as I cut it off to allow it to get some air. Then I put it in ziploc bags for the walk ou to the truck where I have a cooler with ice (frozen gallon jugs) waiting.

Once I get the meat home I clean it up and wrap in cling wrap then set it on a shelf in my beer fridge to age.
