So 2 weeks before opening day and this happens what’s the best way to fix it
the insert for the the bolt came out

Retap it and buy a bigger bolt? That seems like it would be a simple way to fix it.

You could use two nuts, thread one of them all the way into the bolt the then insert bolt into the platform and thread the other nut to bolt and just as need it this a fast fix a tap and bigger bolt would be more better!

I would drill and tap. Anything else is just a bandaid. You will have to do it right eventually.

With it being a soft metal should I put a insert in or just tap
