I've been acquiring points for a GA gator hunt for a few years. I think I'll finally make it down there next year or the one after. Can't wait!

Don't wanna sound cliche, but the White meat on them does taste like chicken with more of a steak like texture. I turn the red meat into sausage gotta add beef fat to it because its very lean
Out of curiosity, is there a reason you prefer beef fat over pork fat? Growing up on a farm we regularly butchered hogs and cattle, but never used beef fat (it was thrown out to the birds in winter as food source or just simply disposed) even when making salami with beef, we added pork fat. I was told that beef fat is not really beneficial for the human body, but pork fat can be better digested. Now, if someone doesn’t eat pork in any form for personal reasons I understand. As a food professional my entire career, I know adding pork fat to the sausages or using lard for frying makes everything taste much better.
