Out of curiosity, is there a reason you prefer beef fat over pork fat? Growing up on a farm we regularly butchered hogs and cattle, but never used beef fat (it was thrown out to the birds in winter as food source or just simply disposed) even when making salami with beef, we added pork fat. I was told that beef fat is not really beneficial for the human body, but pork fat can be better digested. Now, if someone doesn’t eat pork in any form for personal reasons I understand.
