There is no one boat that is perfect for all activities, so be realistic about how you'll spend the majority of your time on the water.
Multi-day trips in the boundary waters with a friend... canoe.
Comfortable seat for all day fishing in moving water, ability to stand and cast... fishing kayak no question.
Shuttled river trips with the wife... 2 kayaks. My friend who leads a lot of float trips calls canoes "divorce boats"
Hauling big game out of a water-only access... canoe. Although my Jackson Kilroy is sort of a canoe/kayak hybrid like the Native mentioned earlier. I can stand and shoot ducks out of it also. Pricey though.
Something like a Nucanoe or a Hobie... way pricier, heavier. Very stable and can handle a lot of weight like a deer, but I tend to see them as designed for big guys. Most people I see actually trailer them.
A good canoe will get the job done though. A huge, bulky plastic one from big box is practically a torture device.
Cheap-o kayaks, not much better.
