Made this the other night. I like to experiment with my food and was looking for something to change it up.
Marinade the back strap overnight
Just salt,pepper, and a little bit of
Worcestershire sauce. Sizzle it in cast iron to barely medium rare . Let rest for a few .
* ( If you have demi glaze jelly heat up a cube in pan and save to pour on top) This step is optional
As your doing that have some English muffins toasting with your choice of pimento cheese, ( is use the jalapeño Palmetto cheese kind) .
Once they the cheese has melted pull out and add the meat bits on top. Drizzle the demi glaze and eat, if you like it spicyer put some siracha on it and enjoy. Easy quick meal.
