A couple weeks ago I bought 50' of dyneema, it has a matte look to it and was hard to cut.
Today I got another 50' from a different source, it looks shiny and I was able to cut through it much easier.
I'm using it to upgrade my primal steps.

Should I be worried about the quality of the shiny dyneema? Especially because it was easier to cut?

My experience is that Amsteel is never easy to cut

That's what I figured. I think I got some cheap Chinese stuff that isn't dyneema.

I would only use Amsteel brand from a known source, like https://doublesteps.com/shop/ or dutchware. Unless you are getting really large diameter, then the stuff is pretty cheap.
