Has anyone impressed people with wild game?

It's too long of a true story......family secret too.... but because I like all of you guys I'll share the secret and the short version: My uncle Levi 85 years old has killed more black bear than anyone I know, he once told me "if you ever shoot one, get it to me in a matter of hours and I will make it taste better than beef." He told me this when I told him I had given up shooting bear because my recipe for bear meat was -you wrap it in aluminum foil on the grill, put everything in the pantry on it to hide the flavor, when done, throw the meat to the dogs and eat the foil- it tastes better. He said, "Oh young buck, you are so much like your father( his younger brother and he meant foolish)."Bring me a bear, and I will show you why I am the keeper of many heads." So yup, you guessed it, my favorite bear pictured at left came to me that fall and I alone dragged him a mile as fast as I could to my truck, drove the half hour to his place and we skinned it and butchered it. His secret was to get the fat off the meat as soon as possible and in doing so take some meat with the fat too. "The meat has already taken in that foul tasting fat, depending on how many hours it has been. Don't be afraid to lose a little meat when butchering it." I took two hard learned lessons from this day. Lesson One, never bring Levi another bear for this lesson on butchering as I only got one large package of steak and the hide from a 190 lb bear, he said "try this and come back if you like it," it was gone of coarse by the time I went back to get more. Lesson Two, never share one large package of meat at thanksgiving dinner with my wifes large family, I had one small piece ( trying to be sure everyone tried it) - it was gone within minutes. It was so good! I remember thinking maybe they won't like it and leave some on their plates. I did tell everyone that it was bear meat in advance. One other thing I have found, don't hunt them near a dump they taste much better if they are eating berries, nuts, and wild game. Oh yeah, and thanks, uncle Levi....!

Never had it but heard Bear really takes on the flavor of what they are eating as in when you kill a bear that has been eating a lot of fish (salmon in particular) it wont be the best but like you said berries and nuts your good.
 
I Was preparing some venison from my first kill, and my 20 year old son was walking through the room. I pulled a piece of hot meat from the skillet, and said here try this... My son not being one to back away from delicious smelling food, opened up chewed it up and said that's delicious. I said, you never knew venison could taste so good did you? He thought about it for a second, Shrugged his shoulders, and has been a venison eater ever since! He's also gone on to try squirrel as well after that, and found he likes it.
Just put it on the little ones plate and they tore it up, and then told them that it was the deer that Puppa shot. This year I heard every time I went out, Puppa did you shoot a deer yet so we can have more?

yeah, it can literally taste like you're eating fish, and not the yummy kind. I used to eat it when I Was single...no more...

I"d soak it in milk for a few days, then make an orange sauce and pan sear it. IF all else failed, I'd douse it in Tobasco and eat it wiht bourbon...
The trick to cooking sawbills is to cook them on a hickory board...you know where I'm going with this, right? LOL.
 
When I worked in the brewery, I took deer burgers to work a few times per year. The 1st few times, some of the guys swore they "wouldn't eat that crap...all deer meat tastes wild". Well, brewery workers are known to occasionally consume the product, and wouldn't you know... after a few brewskies, the venison naysayers got the nerve to try a burger. Could have been listening to other guys rave about them, but they decided to risk it. After one bite, their attitude changed. The venison skeptics ended up being the biggest eaters.
 
My rather citified wife and in laws have found that wild pig pulled pork is much better than regular bbq when prepared by someone that takes pride in consuming what life they take. I won’t feed my family anything I wouldn’t feed your family so I handle the meat as professionally as possible from field to table. A lot of “bad” tasting meat comes from ill handled game.
 
I don't trick people but every year for our company Christmas party I bring something made from wild game. I've made poor man's stew, deer chili and smoked pulled deer neck. Last year my wife made turkey adobo. Now eeveuone asks what I'm bringing this year! My wife has informed me under no circumstances am I to trick her into eating wild game especially deer. She doesn't like the thought of eating Bambi.
 
If Saddlepalooza ever goes longer, that should be the final day. A big wild game banquet!
