I have no photography background. Maybe looking to pack a camera in and play around with getting real nice digital pictures of everything the woods has to offer to share with the family. Is that possibly for a couple hundred bucks??

Totally possible! I used to do photography for a bunch of fly fishing and fly tying magazines and got into wedding photography for 5 years or so. Honestly, the stuff you can do these days with phones is almost on par with what DSLRs were doing 10-15 years ago. Don't worry about needing a fancy camera, it's all about composition, the best camera is the one you have with you. There is a book called, "Exposire, Exposure, Exposure," I read when I was starting out that really helped me and was a better learning tool than the photography classes I took in college.

A big part of the fun of photography is editing, Adobe Lightroom was always my favorite and I'm sure it's come a long way since I was using it.
