Kayak Recommendation

Been using my nucanoe for years....

It’s all a compromise. A canoe is light with large carrying capacity. They aren’t fun to paddle up wind. You can add a trolling motor and battery but then you are as heavy as the heaviest kayaks. Some canoes are pretty stable. They usually aren’t very light. They also are not self bailing. Sit on top kayaks are self bailing. In rough water that’s the best thing about them. They are more stable than canoes but I can stand about as good in a canoe as a kayak. SOT kayaks have funny weight ratings. Most of the kayaks that are rated for 350lbs are not ideal for a 350lb load. It will float with 350 lbs but it may have water coming up into the cockpit. For fishing they recommend a kayak with capacity double your weight.
The nucanoe really looks like a SOT with modular seating.

Correct, but with a really high (legitimate) weight rating.
Your whole post is really a perfect summary of this whole thread as far as pros and cons.
