This is an award all purpose winning rub. I use it on pork and chicken when I am slow cooking. I am doing ribs today and thought I would share.

I’ve been favoring simpler wet rubs lately. My goto for the last year has been kosher salt, Black pepper, and fresh minced garlic. Put into a bowl, add a few tablespoons of oil, mix well, and then apply to meat liberally.

But if you want a good “crust” the best way is to use a brown sugar rub. The brown sugar will carmelize and get nice and crispy.

I have a handful of tricks for BBQ. U had a roommate in college. (God rest his soul) Harris Hollans he was a Memphis N May judge. He also co-authored several bbq books. I had all the secrets for competition cooking before the web. It is really pretty easy. I luv to cook pork because it is so forgiving. Take today. We have guests coming over, I did not feel like slow cooking for 6-8 hours for ribs. I pressure cooked each slab for 8 minutes. Then throw them on my weber kettle low temp for 2 - 2.5 hrs smoking them. You don’t get a great smoke ring and would not be accepted in competition. But most people do not know and cannot tell.
 
I was going to do ribs today but opted to work on the wifeys car instead... regretting that decision lol
 
I did an 8lb shoulder last weekend. Deboned it, trussed it, then rubbed it with salt, pepper, fresh minced garlic, and brown sugar and smoked for 8hrs with hickory chunks. Shoulders and butts are so forgiving it's almost impossible to screw them up.
