Over the last week, I have made 10 lbs of summer sausage and 10 lbs of "bacon-burger brats". I find it really fun to make sausage and it is such a good way to use game meats. I have plans for some traditional brats and some Italian sausage.

I do have one piece of advice.... (well two). First get a sausage stuffer and do not use your grinder. Second (but related) get a good sausage stuffer. I bought a cheap one (vevor) and ti was terrible; I replaced it with a LEMs. Two things to look for (1) It must have a worm gear or screw gear or it will be very hard to turn. (2) the container should be a single piece; if it is two pieces, sausage can ooze from the seams.
 
I made twenty pounds of sausage today as theyre giving pork away at the store. I made longanisa, boudin, andouille, and chorizo. Cost me about 20$ in pork. I got two bone in rib roasts, for .79$ a lb !! Crazy.

I like to make sausage too!
 
Yeah I made 25# of venison brisket dogs Friday. They good!!
I have a custom built stuffer than runs off an air compressor.
All sausages calls for adding water... that's usually so you don't break your stuffer.
I never add water.
I can run mine up to 60psi and push it right out! Nothing to break. If there was a commercial version of this I'm sure it would exceed $2k.
 
Ok I’m already about to jump in on this. Whats your setup, grinder, mixer, stuffer??
I have an Amazon grinder, mega force 3000 or some ****. It’s fine and has chewed through 10 or so deer and a crap load of pork with no problem. If I was to do it again, I’m getting an LEM, or equivalent. I have an lem 5 lb stuffer. Absolutely get the stuffer if you’re doing links. A grinder trying to stuff just doesn’t work. I mix by hand. Vacuum sealer is helpful too. I have an avid armor.


For any of you that don’t know about boudin, look into it. It is a well kept secret of Louisiana and east Texas. I had it for the first time last year when someone brought some back from Texas to PA. Hooked.
