Floating across water

I actually love the trash bag idea if the water is swallower.

To be serious for a second...it sounds like a small inflatable boat/Kayak is what would fit your bill. I have used chest waders many times to cross rivers but that can get dicey in the dark at 30 degrees mid November. Just be safe #1 and good luck
 
You said you’d drag the deer the long way... how much longer is it? Prob easier to walk than bring rafts in. But if you do cross the water with a raft etc and happen to kill one, don’t take the long way, he’ll mostly float across. I’d drag a deer a hell of a lot further in water than on land. That said my preference would be to pack him out and make your life even easier
