Venison ribs

I knew thy were not falling off the bone but just ran out of time. Had to go to the grill if we were gonna eat tonight. Should have started earlier, but live and learn...
 
The wax feeling in your mouth is tallow (fat).

I don’t believe the silver skin and other membranes cause that feeling and when cooked properly break down and actually make the meat very tender. I’m talking about cuts like shanks. You need to pull that membrane off ribs though.

I just go in between the bones with my knife and cut out the meat while it’s hanging. Throw that meat in my grind pile.
