Knives….

I have a pretty decent knife collection with all kinds and brands (Benchmade, Knives of Alaska, SOG, custom blades, etc). The brand I have the most of and like the best? Benchmade! A bit spendy, but the quality is phenomenal and the newer blades using supersteels (like S30V, S90V) are amazing. Got my eye on the Benchmade Hidden Canyon in S90V as a do-all in-the-field hunting blade, but am tempted by the Argali Serac too.

For meat processing, I have a Benchmade (seeing a theme here? LOL) Meatcrafter, Victorinox 6" semi-flex (same as the Bearded Butchers use...check out their YouTube vids...great stuff) and a Victorinox Cimeter, and a Western set that I've never used (bought at a fundraiser auction), but are good as "loaners".

The brand I dislike the most? Buck. Gave them all away....had an exchange with the CEO many years back that put me off the company and ain't never goin' back.

Benchmade Griptillian lives in my pocket all the time as my EDC blade if I'm in jeans.....if I have to put on a suit for work, then I switch to a James Chapter or Benchmade Mini Bugout in the pocket.
 
I carry a Zero Tolerance 0350 in my front left pocket every day no matter what I’m wearing. For gutting I use an ESEE 3”. I’ve got my eye on a couple of Toor knives just haven’t pulled the trigger on anything.
 
There are a lot of knife blanks on Etsy. I bought from a guy who forges them from 80crv2 and it's held up really well for me, handled it with birdseye maple and brass pins and threw a decent leather sheath on it. Ragweed forge has a lot of Scandinavian style knife blanks in a wide range of sizes, too.
 
Case knives made in good old Bradford PA. If you’re looking for a timeless knife that can be passed down for generations, case seems to fit the bill perfectly.

I still remember the first time I saw my uncle skin a deer with his case.

I have a few different ones myself that will be passed down to my son.
 
I have quite a few knives but in the field I like my ole buck 110 I've owned since 1988. I bought it used, my 1st lock back & has traveled everywhere in my life. 2 swipes on a set of ceramic sticks and good for several season's work. The past 8-10 yrs, if its hanging I use a browning fillet knife # 906 or 2nd choice a Rapala wood handled fillet knife (its a bit thinner overall but works ok.). I'm talking strictly whitetails. Never have dressed any huge game animals like browns, moose or elk so I imagine that could make a difference. If I live to see it, Mine will go to a deserving younger hunter. I also use an old timer that I took my dremel tool to and made some serrations on it. Great little knife I've used for over 20 yrs too. Ya gotta laugh but the "Old Hickory" carbon steel blades are very sharp, hold an awesome edge, just tend to be too big for my use in the field. I do have one I need to grind down thinner to be more like the browning fillet cause nothing more fun than zipping around bones..

I'd recommend you go to any gun-n-knife shows in your area. It's a nice way to touch and feel before you buy, plus you're usually buying it from the maker himself.

As for commercial offerings ... another strong vote for Benchmade from me. I'm always hesitant to go with a brand that clearly spends so much on marketing, but that Steep Country knife is awesome for ~$125.

I have a KA-BAR that belonged to many late father-in-law. It's an official Marines issue that saw combat in WW2 and Korea during the Chosin Ridge battle/debacle (interesting story that....only retreat in Marines history, AFAIK). So it's a family heirloom and lives in a safe.....wouldn't dream of using it, just in case it ever got lost in the bush!

I’ll second that. Got one for Christmas last year and it’s the beans. A really efficient tool that quickly became my favorite for one huge reason. I can throw knife and sheath in the dishwasher. My first one has a carbon blade so it has to be dried pretty quick or it will rust. My second has a stainless steel blade so it’s worry free. My second also has a fluorescent orange handle and sheath so there will be no looking for it if it’s on the ground. I don’t carry a knife on the belt, it goes in my pack.
Yes, blaze orange stainless for me and it has been awesome
